Roasted Off the Cob Corn

Serves 4 people

Ingredients

  • 2 tablespoons butter
  • 4 corn on the cob
  • 1/2 cup onion
  • 1/2 cup red pepper
  • salt and pepper

Directions

  1. Take the kernels off the cob with a knife. In a skillet, melt the butter and saute the onions, peppers for about 2 minutes or so. Add the corn and saute until corn is done, kind of crispy.
