Paleo AIP Barbecue Sauce

Serves 2 people

Ingredients

  • 2 tablespoons red palm oil
  • 1 large yellow onion, diced
  • 1 apple, peeled, cored, and grated
  • 1/4 cup molasses
  • 1/3 cup apple cider vinegar
  • 1 tablespoon peeled and grated fresh ginger
  • 1 1/2 tablespoons fish sauce
  • 1/4 teaspoon ground mace
  • 1 clove garlic, crushed
  • 1 teaspoon ground turmeric
  • Pinch of ground cinnamon

Directions

  1. Heat the palm oil in a saucepan over medium-high heat. Add the onion and sauté for 10 to 15 minutes, until caramelized.

  2. Add the remaining ingredients. Bring to a boil, then reduce the heat to maintain a simmer. Simmer uncovered for 15 minutes.

  3. Remove from the heat and purée with an immersion blender.

  4. This barbecue sauce tastes best on meat cooked on a charcoal grill or in a smoker. If you plan to use an indoor grill or bake your meat in the oven, consider adding a drop or two of liquid smoke to the sauce.
