Charred Broccoli with Chickpeas

Ingredients

  • VEGETABLES
  • 8 cups broccoli florets
  • 2 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • few grinds of pepper
  • DRESSING
  • 1/4 cup whole-milk plain yogurt
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil,
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • pinch salt
  • pinch pepper
  • TOPPING
  • 1/4 cup golden raisins
  • 1/4 cup roasted chickpeas

Directions

  1. Toss broccoli florets, olive oil, kosher salt and pepper on a baking sheet.

  2. Broil until charred, 6 to 8 minutes.

  3. Whisk yogurt, cilantro, olive oil, tahini, lemon juice, salt and pepper together.

  4. Top the broccoli with the dressing and 1/4 cup each golden raisins and roasted chickpeas.
