Fermented Edgy Veggies Medley

Ingredients

  • 1 gallon basic brine
  • (1 gallon water, 1/2 cup salt)
  • 1 head cauliflower, cut into florets
  • 2 lbs of carrots, peeled and sliced
  • 1 onion, cut into wedges
  • 1 lb. jalapenos, cored and cut into rounds
  • 1-2 T. of dried oregano
  • 1-2 grape leaves

Directions

  1. Combine the veggies in a large bowl and mix to distribute the ingredients.

  2. Pack into a crock or jar, wedging them under the shoulder of the jar with 4" of headspace in the crock.

  3. Pour in enough brine to cover the veggies completely. Remember the mantra of “Submerge in brine and all will be fine”

  4. Place a grape leaf or a piece of plastic wrap. Weight it down with plate and jar of water. Let is set for 7 to 21 days to ferment.
