Gingerbread Bars with Kefir Frosting

Ingredients

  • ingerbread Bars
  • 1/2cup Coconut OilMelted
  • 3/4cup coconut sugar
  • 1/3cup blackstrap molasses
  • 1teaspoon Vanilla
  • 1 Egg
  • 2teaspoons baking soda
  • 1- 3/4cups Sprouted Spelt Flour
  • 1tablespoon Cinnamon
  • 1/4teaspoon nutmeg
  • 1/2teaspoon Ground Ginger
  • 1/2teaspoon Celtic Sea Salt
  • Kefir Frosting
  • 8ounces cream cheeseTry Nancy's cultured cream cheese!
  • 1/2cup Kefir Cheese
  • 2tablespoons Honey
  • 1teaspoon Vanilla

Directions

  1. Preheat oven to 350 degrees F. Grease a 8×8″ baking pan.

  2. In a large bowl, whisk together coconut oil, coconut sugar, molasses, and vanilla.

  3. Add the egg and whisk until combined.

  4. Add baking soda, sprouted flour, cinnamon, nutmeg, ginger, and salt. Mix until well combined.

  5. Spread dough evenly into the greased pan.

  6. Bake at 350 degrees for 15-20 minutes. (Do not overcook). Remove from oven and allow to cool completely. Top with Kefir Frosting.

  8. Whisk softened cream cheese, kefir cheese, honey, and vanilla together.

  9. Once the bars are cool, you may spread your frosting on the top. Garnish with extra nutmeg. Cut into squares and serve.
