Irish Soda Bread

Serves 10 people

Ingredients

  • 2 C whole wheat flour
  • 1 C white flour
  • 1/2 C bran
  • 1/2 C wheat germ
  • 1 T brown sugar
  • 1/2 t salt
  • 1 1/2 t baking soda
  • 2 C buttermilk

Directions

  1. Preheat oven to 450 degrees F.

  2. Stir dry ingredients with wooden spoon until thoroughly mixed.

  3. Make a well in the middle and add buttermilk. Stir ingredients just enough to moisten.

  4. Turn dough onto floured board and gently work dough with hands (a little less rigorous than kneading) for 1 minute.

  5. Shape into round loaf and place in 8-inch round cake pan. Cut and “X” across the top of the dough with a knife.

  6. Reduce heat to 350 degrees F. and bake 55-60 minutes.

  7. Helpful Hint: Bread is done if it sounds hollow when tapped on the bottom. For a softer crust, wrap bread in a tea towel (dish towel) immediately upon removing from oven.
