Pruitt’s Jello Salad

Doris’ recipe that Britt always made! lol

Cook time: 5 minutes
Serves 10 people

Ingredients

  • 2 C liquid - reserved from drained pineapple + water
  • 1 C mayo
  • 1 C cottage cheese
  • 1 can crushed pineapple, 15 1/4 oz can
  • 2 - 3oz packages of jello (mix & match or the same flavor; strawberry and anything is good. Peach is great)
  • 1/2 C chopped nuts -pecans or almonds work. More if you like

Directions

  1. Drain canned pineapple, reserving the liquid. Add enough water to liquid to make 2 C.

  2. Pour in a saucepan and bring to boil or use a microwave safe vessel and heat to almost boiling.

  3. Dissolve the jello in the hot liquid. Must stir to make sure it dissolves.

  4. Allow to sit out and cool slightly then chill in the icebox until slightly thickened, stirring occasionally.

  5. In a mixing bowl, stir together the remaining ingredients. Fold the jello into the Mayo mixture.

  6. Chill in fridge until set.
