Mozzarella, Tomato, & Avacado Salad With Basil

Serves 4 people

Ingredients

  • 4 ripe tomatoes, sliced
  • 2 avacados, halved & sliced crosswise
  • 8oz (250g) mozzarella, sliced
  • Salt, black pepper
  • 1 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 handful fresh basil leaves, torn

Directions

  1. Layer the tomatoes, avacado, & mozarella on a large serving dish or individual plates, sprinkling with salt & pepper in between the layers. Drizzle over lemon juice & oil. Scatter with basil & serve immediately.
