Zucchini Chocolate Cake

This recipe is from my sister-in-law. She ALWAYS adds the “optional” chocolate chips and the pecans if she has on hand.

Ingredients

  • 3/4 cup butter
  • 3 eggs
  • 2 cups sugar
  • 2 1/2 cups flour
  • 1/2 cup cocoa
  • 2 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 2 tablespoons orange zest
  • 2 cups grated zucchini
  • 2 teaspoons vanilla
  • Optional- you can add 1/2 cup of chocolate chips and/or 1/2 cups pecans

Directions

  1. Beat eggs, butter and sugar until creamy.

  2. Add and combine flour, cocoa, baking powder, salt, cinnamon and milk.

  3. Stir in grated zucchini, orange zest and vanilla.

  4. Optional- stir in chocolate chips and/or pecans.

  5. Pour into a greased, floured Bundt pan. Bake at 350 degrees for 45 minutes. (Sometimes she bakes in small loaf pans to give as gifts.)
