Roasted Brussels Sprouts w/ Maple, Garlic & Bacon

Ingredients

  • 1 1/2 pounds fresh Brussels sprouts
  • 8 slices bacon (or more!)
  • 1 tablespoon olive oil
  • 3 tablespoons pure maple syrup
  • 1 or 2 cloves garlic, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

  1. Preheat oven to 375 degrees F.

  2. Trim bottom of sprouts and cut in half.

  3. Parboil the sprouts in salted water for about 5 mins, drain and set aside.

  4. Partially cook the bacon in your preferred way. I like to line a baking sheet/cookie sheet with parchment paper so that it comes up on all sides. Place a baking rack in pan and spread out bacon slices on it. Place baking sheet with the bacon in the preheated oven and cook for approx 10 mins. You only want to partially cook the bacon. When partially done, take out and chop the bacon in large pieces. Set aside.

  5. Drain, reserving about 2 or 3 Tbls of grease (for sauteing garlic).

  6. Heat 1 or 2 tsps bacon grease in a small skillet over medium heat; cook and stir garlic until golden brown, approx 2 mins Don’t overcook.

  7. In a large bowl, add Brussels sprouts, garlic, salt, pepper, bacon, remaining bacon grease, Maple syrup and a little olive oil if needed. Stir or toss to coat.

  8. Line a baking sheet with foil, dull side up, and spray with cooking spray lightly. Pour out the sprout mixture onto foil lined pan in a single layer.

  9. Bake/roast in 375 degree F oven for about 15 minutes. Stir and check for doneness. Cook in 5 min increments more til desired doneness. Watch out for burning the syrup.

  10. Take out of oven when done and let sit for a few minutes before serving.
