Portabella Sandwich

  • 1-2 Portobello mushroom heads (1 per person, 2 if you're really hungry!)
  • raw nut butter (almond butter works well) OR garlic hummus instead
  • 1 slice tomato
  • 1 piece lettuce
  • sliced avocado
  • slice onion


  1. Spread nut butteror garlic hummus on the underside of the mushroom head, about 1/4 inch thick works well. (I think I would grill the portabellas before spreading on “something”. Not sure of using a “hummus”…but maybe just a garlic, parsley seasoned butter.)

  2. Slice the rest of the vegetables and layer on top. Eat like a sandwich!
