GAPS Basic Chicken Meat Stock

You can substitute chicken thighs and legs.

Ingredients

  • 2-3 lbs. pastured skin on chicken.
  • 3-4 carrots, coarsely chopped
  • 1 small onion
  • Handful of black pepper
  • 1-2 teaspoons Celtic Sea Salt
  • 2-3 sprigs fresh rosemary or thyme
  • Water to cover by 2 inches
  • Garlic cloves, to finish

Directions

  1. Place all ingredients in 5-6 quart dutch oven. Bring to a boil, skim and discard the scum. Bring down to a simmer

  2. Keep at a low simmer for 1-1/2 to 3 hours.
