GAPS Crock-Pot Soup

Ingredients

  • 1 quart Chicken or beef stock
  • 1 lb. stew beef, rump roast, or chuck roast
  • 2-3 tablespoons animal fat, coconut oil, or ghee
  • 1 head kale(stems removed)
  • 2-4 chopped fresh tomatoes or 1 can (28 oz) organic whole peeled tomatoes.
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, pressed
  • 2 sprigs each rosemary, thyme or other fresh herbs
  • 1 bay leaf
  • Sea salt

Directions

  1. Chop and put everything, EXCEPT THE FRESH VEGGIES, into a crock-pot and cook slow and low for 4 to 6 hrs. Add the vegetables about 40 to 50 minutes before the soup is done.
