Apple Pie Enchiladas

Ingredients

  • 2 recipes of apple pie filling - or - 2 (21 ounce) cans apple pie filling
  • 12-14 (8 inch) flour tortillas
  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup water

Directions

  1. Preheat oven to 350 degrees F. Grease a 9×13 baking dish with butter or nonstick spray.

  2. Warm tortillas if desired to help with rolling.

  3. Spoon about one quarter cup of pie filling evenly down the center of each tortilla. Roll up, tucking in edges, and place seam side down in prepared dish.

  4. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 30 minutes.

  5. Bake in preheated oven 20-25 minutes, or until golden. If desired, use culinary torch to caramelize sugar very lightly. Serve as is, or warm with ice cream or whipped cream.
