GAPS Fruit Kvass

Ingredients

  • 1 cup coarsely chop fruit and veggies
  • garlic cloves, minced (as desired)
  • gingerroot, minced (as desired)
  • 1/2 cup whey from yogurt or kefir

Directions

  1. Place all ingredients in a wide-mouth quart jar. Fill jar with pure spring or filtered water to the shoulder, leaving a 2 inch space between the top of the liquid and the lid. Cap tightly.

  2. Leave on counter at room temperature for 2-3 days, or until the lid becomes taut under pressure of your finger. Store in fridge. Drink straight or dilute with spring or mineral water.
