Eggplant Souffle (Spongato)

Ingredients

  • 2 medium eggplants
  • 4 eggs
  • olive oil
  • feta cheese
  • herbs

Directions

  1. Cut eggplant in half the long way

  2. Brush eggplant with olive oil (several table spoons – it will absorb it all)

  3. Microwave eggplant until done (10-20 minutes). Do not under cook

  4. Wait for it to cool

  5. Scoop out the inside

  6. Mix with eggs and feta cheese and herbs

  7. Pour into ramekins and bake until eggs are done (20-30 minutes)
