Shakshuka

Serves 4 people

Ingredients

  • 1/2 cup olive oil
  • 2 cloves garlic, chopped
  • 1/2 a white onion, chopped
  • 1 bell pepper, sliced
  • 28oz can of crushed tomatoes
  • 5 eggs
  • Pinch of ground cumin
  • Pinch of cinnamon
  • Pinch of paprika
  • Pinch of mint
  • Pinch of celery powder
  • Pinch of red pepper flakes
  • Salt and pepper.

Directions

  1. In a large skillet over low, heat oil, garlic, onions and spices until onion begins to soften and garlic turns golden-brown.

  2. Raise heat to med-high. Add tomatoes and bell pepper. Once sauce reaches a soft boil, lower and simmer uncovered for 5-10 min allowing sauce to thicken and peppers to soften. Add more s&p if needed.

  3. Break eggs directly into the sauce, season with more s&p . Cover, and cook for about 2 min.

  4. Spoon a little bit of the sauce over the eggs, cover and continue to cook until eggs set, 5-10 min.
