Spinach Pie

Ingredients

  • 2 packages frozen spinach
  • 1 bunch scallions, chopped
  • 0.5 lb feta cheese, cut into half inch cubes
  • 2 eggs
  • Parmesan cheese

Directions

  1. Defrost spinach overnight in the fridge (or in the microwave if needed)

  2. Using a fine strainer press all of the water out of the spinach

  3. Mix with feta, eggs, scallions, and Parmesan cheese

  4. Bake at 350 until eggs are cooked
