spaghetti squash spaghetti

Ingredients

  • 1 spaghetti squash
  • 3/4-1 pound lean ground beef
  • 3-4 cloves garlic
  • half a red onion
  • 1 tbls butter/olive oil
  • 1 can fire roasted tomatoes

Directions

  1. cut the squash in half long ways

  2. spray with oil and season with salt and pepper

  3. put face down and roast at 400 for about 40-50 minutes

  4. brown ground beef in one pan

  5. put butter and a bit of olive oil with garlic and onions and saute until translucent

  6. add tomatoes and beef

  7. add 1/2 tbsp balsamic vinaigrette, salt and pepper and let simmer for 30 min
