Crispy Shortbread Cookies

One of my book club ladies brought this to a meeting. They were delish…excellent as a Christmas Cookie.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • -
  • Melted White Chocolate
  • Peppermint flavoring (good for Christmas)
  • Christmas or other seasonal sprinkles

Directions

  1. Preheat the oven to 325 degrees. Line baking sheets with parchment paper and set aside.

  2. In the bowl of a stand mixer, add in butter, sugar, vanilla and flour.

  3. Mix slowly until a crumbly dough forms. It will look like crumbs in the stand mixer, but when squeezed together in your hands will hold its shape.

  4. Form dough into small balls and slightly flatten and place onto prepared baking sheets.

  5. Bake for 12-15 minutes or until the bottoms of the cookies are barely golden brown.

  6. Cool.

  7. May be dipped into melted chocolate bark, then sprinkles.

  8. Store in airtight containers after chocolate sets.
