Orzo-Spinach Salad with Feta

Ingredients

  • 16 oz. orzo
  • 10 oz. fresh spinach
  • 8 oz feta, crumbled
  • 3/4 cup pine nuts
  • 1/2 cup red onion, finely chopped
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar

Directions

  1. Cook orzo as directed until al dente; drain and rinse. Transfer to a large bowl. Stir in spinach, feta, pine nuts, red onion, dried basil, salt and pepper. Toss with olive oil and vinegar. Serve at room temp or chilled.
