Ingredients
- 16 oz. orzo
- 10 oz. fresh spinach
- 8 oz feta, crumbled
- 3/4 cup pine nuts
- 1/2 cup red onion, finely chopped
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
Directions

Cook orzo as directed until al dente; drain and rinse. Transfer to a large bowl. Stir in spinach, feta, pine nuts, red onion, dried basil, salt and pepper. Toss with olive oil and vinegar. Serve at room temp or chilled.
