Ingredients

  • 3 bone-in skin-on chicken thighs and drumsticks
  • 4 tomatillos, quartered, husks discarded
  • 4 poblano peppers, roughly chopped, seeds and stems discarded
  • 1 large green bell pepper roughly chopped, seeds and stems discarded (about 2 peppers)
  • 2 Serrano or jalapeƱo chilies, roughly chopped, stems discarded
  • 1 medium white onion, roughly chopped (about 1 medium)
  • 6 medium cloves garlic, peeled
  • 1 tsp cumin powder
  • 1 TBS soy sauce
  • cooked rice for serving

Directions

  1. Saute tomatillos,peppers, onion, garlic, cumin, in a pressure cooker.

  2. Add chicken,seal pressure cooker, bring to high pressure, and cook for 15 minutes.

  3. Release pressure.

  4. Using tongs, transfer chicken pieces to a bowl and set aside. Add soy sauce to remaining contents of pressure cooker. Blend with a hand blender or in a standing blender and season to taste with salt.

  5. Return chicken to sauce, discarding skin and bones and shredding if desired. Transfer to a serving platter
