Zucchini Bread

Freezes well.

Cook time: 60 minutes

Ingredients

  • 3 eggs
  • 1 3/4 cup sugar
  • 3 tsp. vanilla
  • 3 cups flour
  • 1 cup vegetable oil
  • 1/4 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 2 cups shredded zucchini
  • Topping:
  • 1 tbsp. butter
  • 1/2 cup sugar
  • 1 tsp. cinnamon

Directions

  1. Mix all ingredients for bread. Put in 2 loaf pans. Put topping on before baking. Bake at 325 degrees for 1 hour.
