Bran Muffins

Yields 12 muffins

Cook time: 18 minutes

Ingredients

  • 1 1/4 cup flour
  • 1 tbsp. baking powder
  • 1/2 cup sugar
  • 1 1/2 cups Kellogg's All Bran cereal
  • 1 egg
  • 1 1/4 cup vegetable oil
  • 1/2 tsp. salt

Directions

  1. Stir together flour, baking powder, salt and sugar. Set aside.

  2. Measure cereal and buttermilk into large mixing bowl. Stir to combine. Let stand for 2 or 3 minutes until cereal has softened. Add egg and oil. Beat well.

  3. Add flour mixture. Stir only until combined. Portion batter evenly into 12 muffin cups.

  4. Bake at 400 degrees for 18-20 minutes or until done.
