Bessie’s Sweet Pickles

Make sure you always cut sweet pickles in half BEFORE putting in syrup the first time.

Ingredients

  • Cucumbers
  • 1 tsp. Alum
  • 1/4 c. pickling spices
  • 4 c. vinegar
  • 8 c. sugar

Directions

  1. Clean cucumbers and put in crock. Put in boiling water for 2 days. (Change the water every day.)

  2. 3rd day – Add boiling water with 1 tsp. Alum for one day. Wash and drain.

  3. 4th day – Cut up in sticks or any way you choose.

  4. 5th day – 1/4 c. pickling spices, 4 c. vinegar, and 7 c. sugar. Bring to boil.

  5. 6th day – Heat syrup from pickles adding 1/2 c. sugar. Pour over pickles.

  6. 7th day – Heat syrup from pickles adding another 1/2 c. sugar. Pour over pickles.

  7. 8th day – Can. If you cannot can that day, you may heat the syrup again and pour over pickles.
