Betty’s Carrot Cake

Ingredients

  • 4 eggs
  • 1 c. Mazola oil
  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 c. grated carrots
  • For frosting - 1 8 oz. package cream cheese
  • 1 box powdered sugar (or 3 cups)
  • 1 stick oleo
  • 1 tsp. vanilla

Directions

  1. Grease 2 pans for layer cake or one 9×13 pan.
  2. Combine ingredients and pour into pan(s).
  3. Bake at 325 for 45 mins. or until done.
  4. For frosting: Cream oleo and cheese.
  5. Add powdered sugar and vanilla.
  6. May add nuts on top.
