Burdella’s Lemon Bars

Ingredients

  • 1 c. plus 2 tbsp. flour
  • 1/2 c. oleo
  • 1/4 c. powdered sugar
  • 2 beaten eggs
  • 1 c. sugar
  • 3 tbsp. lemon juice
  • 1/2 tsp. baking powder
  • 1 c. flaked coconut
  • pinch of salt

Directions

  1. Mix 1 cup flour, oleo, and powdered sugar and put into a pan. Bake at 350 for 10 minutes.
  2. Mix together eggs, sugar, baking powder, coconut, salt. Add to pan. Bake at 350 for 25 minutes.
  3. Sprinkle top with powdered sugar and return to oven for 5 minutes more.
