Gluten-free Ginger Peanut butter cookies

Ingredients

  • 1 cup peanut butter
  • 1/2 cup sprouted oatmeal
  • 1/2 cup shredded coconut
  • 3 eggs
  • 1/3 cup coconut oil
  • 1/4 cup coconut flour
  • 1/4 cup honey
  • 1 Tbsp molasses
  • 1 Tbsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp unrefined sea salt
  • 1/2 tsp baking soda

Directions

  1. Mix together peanut butter, eggs, coconut oil, honey and molasses. With a fork, stir together coconut flour, baking soda, salt and spices.
  2. Add dry mixture to the wet and use mixer to thoroughly incorporate all ingredients. Stir in oatmeal and coconut.
  3. Using a tablespoon or small ice cream scooper, spoon dough onto a parchment-lined cookie sheet.
  4. Bake at 350°F for 14 minutes.
  5. Cool and enjoy!
