Cream Puffs

Ingredients

  • 1/2 c. shortening
  • 1/8 tsp. salt
  • 1 c. boiling water
  • 1 c. shifted floor
  • 4 eggs (unbeaten)

Directions

  1. Add shortening and salt to boiling water. and heat to boiling.
  2. Reduce heat. Add flour all at once. Stir vigorously until mixture forms ball around spoon, leaving pan clean. Remove from heat.
  3. Add 1 egg at a time heating very thoroughly after each addition.
  4. Continue heating until mixture is thick and shiny and breaks from spoon.
  5. Shape on ungreased cookie sheet, using 1 tbsp. of pastry for one puff based upon size.
  6. Bake 450 for 20 minutes.
  7. Reduce heat to 350, bake 20 minutes longer.
  8. Fill with anything – pie filling, whipped cream of pudding.
