Harvest Time Cake

Ingredients

  • 3 c. all-purpose flour
  • 1 3/4 c. sugar
  • 1 tbsp. baking soda
  • 1 tbsp. cinnamon
  • 1 1/4 c. sweet cream butter, melted
  • 4 eggs
  • 1 tbsp. vanilla
  • 1 c. chopped pecans
  • 1/2 c. raisins
  • 1/2 c. flaked coconut
  • 3 c. (6 med.) grated carrots
  • 1 c. (1 large) peeled, grated apple
  • Frosting:
  • 1/3 c. sweet cream butter
  • 3 c. powdered sugar
  • 1 1/2 tsp. vanilla
  • 2 to 4 tbsp. milk

Directions

  1. Heat oven to 350. In large bowl, combine flour, sugar, baking soda, cinnamon and salt.

  2. Stir in 1 1/4 c. butter, eggs and 1 tbsp. vanilla until well mixed.
  3. Stir in remaining cake ingredients. Pour into greased 13×9″ baking pan. Bake for 40-50 mins. or until wooden pick inserted in center comes out clean. Cool completely.
  4. In 1-qt. saucepan, heat 1/3 c. butter over med. heat until delicate brown (5-6 mins).
  5. In small mixer bowl, combine browned butter, powdered sugar and 1 1/2 tsp. vanilla. Beat at med. speed, scraping bowl often, gradually adding milk until frosting is smooth and spreadable. Frost cake.
