Dorothy’s Peanut Brittle

Ingredients

  • 2 c. sugar
  • 1 c. corn syrup (white)
  • 2 c. raw Spanish peanuts
  • 1/2 c. water
  • 1 tsp. vanilla
  • 2 tsp. shifted soda
  • Pinch of salt

Directions

  1. Grease cookie sheet ahead of time.
  2. Cook sugar, corn syrup, and water to hard boil. Add peanuts. Cook to hard crack stage.
  3. Remove from heat. Add vanilla, salt, and soda.
  4. Take 2 knives and pull from outside while real hot to make it thin. (Really takes 2 people for the last part.) The thinner, the better.
  5. When cold, break into pieces and store in covered container.
