Frances Brazil Nuts Date Cake

Ingredients

  • 3 c. Brazil nuts (1 lb. unshelled)
  • 1 lb. pitted dates (fresh chopped)
  • 1 c. (one jar) drained Maraschino cherries
  • 1 c. shifted flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 2/3 tsp. salt
  • 4 eggs
  • 1 1/2 tsp. vanilla

Directions

  1. Put nuts, dates, and cherries into large bowl.
  2. Sift flour, sugar, baking soda, and salt over nuts and dates. Mix by hand until foamy.
  3. Add vanilla. Stir until well mixed.
  4. Bake in greased and waxed pan.
  5. Bake at 300 for 1 hour and 45 minutes.
  6. Let cool before slicing.
  7. Shelling Brazil nuts: Cover with cold water. Bring to a boil for 3 minutes. Drain and cover with cold water. Drain real good and crack. Put them in even if that are not whole.
