Rhubarb Salad

Ingredients

  • 2 c. diced rhubarb
  • 1/2 c. sugar
  • 1/2 c. water
  • 1 3oz. box of red Jello
  • 1 3oz. cream cheese, soft and mashed
  • 2/3 c. finely diced celery
  • 1/4 c. chopped pecans

Directions

  1. Boil the first three above ingredients on low for 10 mins. Remove from heat.
  2. Add Jello and cream cheese, and stir until dissolved.
  3. Chill until slightly thickened; wipe.
  4. Add celery and pecans
  5. Chill until set.
