Paradise Chicken

Ingredients

  • 4 boneless, skinless chicken breast halved
  • 1 clove garlic, pressed
  • Salt to taste
  • 2 tsps. margarine
  • 1 c. pineapple juice
  • 1/2 tsps. rosemary, crumbled
  • 1/4 tsps. red pepper flakes
  • 1/2 c. water
  • 2 tsps. cornstarch
  • 1 lemon, thinly sliced
  • 1/4 c. sliced green onion

Directions

  1. Rub chicken with garlic. Season with salt.
  2. In nonstick skillet, saute chicken in margarine. Add juice, rosemary and pepper flacks to pan. Cover, simmer for 10 minutes.
  3. Stir water and cornstarch to blend, stir into pan juices. Cook, stirring, until sauce boils and thickens.
  4. Add lemon and onion. Heat through.
