Lunchmeat Pinwheels – Keto Friendly

Ingredients

  • Lunchmeat slices (example: ham, turkey, chicken, roast beef, etc)
  • Cream Cheese
  • Spices (optional, to taste)

Directions

  1. Dry lunchmeat slices with a paper towel if they are damp (ham is very damp). If the meat is too moist, the cream cheese will not spread.

  2. Soften cream cheese in the microwave (15-30 second increments). You want it to be softened slightly, but not hot/melted.

  3. Mix in spices if you want. This is completely optional. Suggestions: garlic and onion, Italian spices, etc.

  4. Spread a THIN layer of cream cheese on the lunchmeat. You do not want it to be thick, or it will squish out when you try to take a bite.

  5. Roll each lunchmeat with cream cheese into a tight roll individually.

  6. Slice with a sharp knife into bite sized pinwheels.

  7. Refrigerate until eaten. Will keep for a few days to a week if lunchmeat was very fresh.

  8. If you want to be creative, you can layer different kinds of lunchmeat with cream cheese together and roll it up creating multiple layers in the roll. If you do this, you may need to put multiple pieces of meat together to make a layer (like 4 pieces slightly overlapping), apply cream cheese, lay another layer of meat (same or different kind), apply cream cheese, and then roll up. I wouldn’t recommend more than 4 layers. You can also use things like ranch sour cream dip or guacamole as a layer (just check the carbs before you do!)
