Creamy Lemon Bars

Ingredients

  • 1 1/2 c. plus 3 tbsp. unsifted flour
  • 1/2 c. confectioners' sugar
  • 3/4 c. cold margarine or butter
  • 2 eggs
  • 1 14-oz. can sweetened condensed milk (NOT evaporated milk)
  • 1/2 c. bottled lemon juice
  • Yellow food coloring, optional
  • Additional confectioners' sugar

Directions

  1. Preheat oven to 350.

  2. Combine 1 1/2 c. flour and 1/2 c. sugar.
  3. Cut in margarine until crumbly.
  4. Press firmly on bottom of 13-by-9-inch baking pan. Bake 15 minutes.
  5. In small mixer bowl, beat eggs with sweetened condensed milk and 3 tbsp. flour.
  6. Stir in bottled lemon juice and food coloring if desired.
  7. Spread evenly over prepared crust. Bake 20 minutes or until set. Cool. Chill.
  8. Top with additional confections’ sugar. Store covered in refrigerator.
  9. Makes 24-36 bars.
