Ingredients

  • 3 c. all purpose flour
  • 1 tsp. salt
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 c. Crisco shortening
  • About 3/4 c. buttermilk

Directions

  1. In bowl, combine flour, salt, baking powder and soda. Stir well to combine.
  2. Add the Crisco and mix using a pastry blender or hands until mixture resembles cornmeal. Add enough buttermilk (about 3/4 c.) to make a soft dough.
  3. Turn out onto a well-floured surface. Knead gently only a brief time until dough holds together and is not sticky.
  4. Roll out to a thickness of about 1/2 inch, then cut into circles with a cookie or a biscuit cutter.
  5. Place on a lightly greased cookie sheet. Prick the tops gently with a fork and brush with beaten egg white.
  6. Bake in a preheated oven at 450 for about 8 to 12 minutes or until golden brown.
