Kinda Ugly but Quite Tasty Chicken Tomatillo Salsa Soup

Ingredients

  • 3 boxes chicken stock
  • 2 15-oz jars tomatillo salsa (Arriba)
  • 1 11-oz jar salsa verde (HEB That Green Sauce medium)
  • 4 chicken breasts, cooked and shredded
  • 4 links chicken and apple sausage, thinly sliced and browned
  • 3 cans Great Northern white beans, drained
  • 2 bunches green onions, chopped
  • liquid smoke to taste
  • splash of lime juice
  • dried lemon peel to taste
  • heavy cream to taste/thickness
  • shredded Muenster and pepperjack cheese for topping
  • chopped avocado pieces for topping

Directions

  1. Cook chicken in instant pot on high pressure for 10-12 minutes, natural pressure release, and then shred.

  2. Combine all ingredients through lemon peel in large pot and heat.

  3. Add heavy cream and stir until desired taste/thickness is achieved.

  4. Top with cheese and avocado to serve.
