Vampire Bite Truffles

Ingredients

  • 7 oz. prepared marzipan
  • 1/2 cup cherry pie filling or red jam
  • 12 oz. white candy coating

Directions

  1. Star by dividing marzipan into 14 1/2 oz. pieces. (Almost a tablespoon each). Set aside four portions and start shaping the rest into balls, then press thumb in center and working around until a bowl-shape is formed. ( about 1 1/2 inch balls) Puree cherry pie filling in food processor until liquid. If jam or jelly is too thick, add a bit of water so it will flow from truffle.
  2. Working one at a time, place a spoonful of pie filling in center of each marzipan bowl. Pinch top of bowl inward. It will not pinch closed, but get closer together. Using a small amount of reserved marzipan, make a small disc, wide enough to cover top of candy bowl. Spread over bowl like a lid and gently press down. Carefully pinch seam to seal in filling. When all are finished, place them in the freezer about 15 to 20 minutes. Once firm, melt the candy coating, until smooth, dip truffles in coating then place on lined baking sheet for coating to set.
  3. To make vampire bites, use a toothpick to make stab marks, then dip pick in remaining filling and touch to holes, letting some trickle down to look like blood.
  4. Candy will “bleed” when bitten.
