Stewed Tomatoes or Tomato Sauce

Sounds exactly what I need to do to make tomato sauce.

Ingredients

  • 4 quarts peeled, cored, skinned tomatoes
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 Tablespoon sugar
  • 2 teaspoons salt

Directions

  1. Combine all ingredients in a large sauce pot.

  2. Cover and cook for 10 minutes, stirring to prevent from burning on bottom. (I WILL COOK LONGER TO REDUCE AND THICKEN. ALSO MAYBE RUN THROUGH FOOD PROCESSER, BLENDER OR IMMERSON BLENDER.)

  3. Pour hot into hot jars, leaving 1/2 inch head space. Add 1/2 teaspoon additional salt and 1/2 teaspoon lemon juice to the top for pints; 1 teaspoon additional salt and 1 teaspoon lemon juice to each jar. Adjust caps.

  4. Process pints 15 minutes; quarts 20 minutes.
