Enchiladas

Serves 4 people

Ingredients

  • 1 pound of beef
  • 1/2 cup diced onions
  • salt to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground garlic powder
  • 12 corn tortillas
  • 1 jar of enchilada sauce
  • 8 ounces of shredded hormone free cheddar cheese

Directions

  1. Place ground beef in a skillet; add the salt, black pepper, garlic powder. Add onions and cook until meat is done.

  2. Heat your oven to 350 F. Heat corn tortillas on a grill until they are soft. Lay them on a 9 × 13 casserole dish. Add about 2 tablespoons of ground beef and roll them. Arrange them with the seam down next to each other.

  3. Add 1/2 cup water to enchilada sauce and pour the whole jar of enchilada sauce on top making sure it covers all the tortillas. Add the grated cheese on top and bake until cheese is melted about 20-30 minutes.
