Mexican Corn Dip

My son made this for a 4th of July Party, it was a huge hit!

  • 2 cans Mexicorn (or fire roasted corn)
  • 1 can Rotel (regular or hot)
  • 2 cups shredded cheese (calls for cheddar but I will use the Mexican cheese mix
  • 1 cup Hellman's Mayo
  • 1 cup sour cream
  • 8 green onions sliced
  • 1 bunch or cilantro chopped
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Tabasco to taste (optional)


  1. Mix all ingredients together.

  2. Chill preferably over night to get the flavors to meld.

  3. Serve with Fritos Scoops.
