Ingredients

  • 5 LBS. OF TRIPE, CUT IN SQUARES
  • 2 LBS. BEEF BONES
  • 1 TABLESPOON OREGANO
  • 5 GARLIC CLOVES
  • 1 MEDIUM ONION
  • 2 TABLESPOONS GROUND CUMIN
  • 2 TEASPOONS PEPPERCORNS, CRUSHED
  • 5 DRIED CHILE PODS
  • 2-3 CANS OF HOMINY
  • SALT TO TASTE

Directions

  1. Combine the tripe, beef bones, garlic, onion, and salt in about 5 cups of water. Cook for about 4 hours on low.

  2. Prepare the red chile by boiling the chiles in water until soft, about 15 minutes. Let them sit in the water until it cools to allow continue softening.

  3. In the blender, blend the red chiles until it turns into a smooth sauce. Combine the sauce with the cumin, peppercorns, and the oregano to the cooked tripe and beef and continue cooking until the flavor is to your liking about 30 minutes. Add the hominy and continue cooking until hominy is warm.

  4. Taste to see if you need to add more salt.
