GAPS CAULIFLOWER AND CHEESE

Ingredients

  • 1 large head of cauliflower
  • 2 cups raw cheddar cheese, grated
  • 1/2 stick of butter
  • 1/4 cup heavy low pasteurized cream, pastured
  • 2 egg yolks
  • 1/2 teaspoon salt
  • dash of pepper
  • 2 Tablespoon coconut oil

Directions

  1. Preheat oven to 350 f.

  2. Cut the cauliflower in half; then cut out and remove core. Break or cut the cauliflower into bite-size pieces.

  3. Put the coconut oil in a baking dish, spreading evenly on the surface.

  4. Add the cauliflower to the baking dish and sprinkle with salt and pepper. Mix it well in the oil until it is coated in oil. Bake it for about 30 minutes; bake until cauliflower is “tender” not mushy. Meanwhile prepare the cheese sauce:

  5. Grate the cheese; Fill a pot with about 2 inches of water. Bring the pot of water to a boil and then turn off the stove.

  6. Put the butter and cream in a glass measuring cup. Place the measuring cup in the pot of hot water and stir with a spoon until the butter melts.

  7. Add the grated cheese and stir until the mixture is smooth. Mix in egg yolks and salt. Serve immediately.
