Gluten-free French Toast

Serves 4 people

Ingredients

  • 4 large eggs, beaten
  • 1/2 to 3/4 cup milk, or dairy-free substitute, such as coconut milk
  • 1 teaspoon sugar, or honey
  • 1 pinch salt, optional
  • 1 teaspoon pure vanilla extract
  • 8 slices gluten-free bread
  • 2 tablespoons coconut oil or butter
  • maple syrup

Directions

  1. In a shallow bowl, combine the eggs, milk or dairy substitute, sugar, salt, and vanilla, and whisk until thoroughly blended.

  2. Dip slices of gluten-free bread in the egg mixture. Allow both sides of the bread to soak up as much egg mixture as it will hold (like a sponge)

  3. n a large, heavy skillet, heat oil on medium-high. Fry the coated bread slices.

  4. When one side is golden brown, flip the slices and cook the second side until golden brown.

  5. When done, remove the slices to a serving plate. Serve with butter and maple syrup or honey
