Whole Wheat pancakes

These are just your basic whole wheat pancakes. I usually make them with sauteed apples, cinnamon and sugar. Delicious and fluffy!

Ingredients

  • 2 cups whole wheat flour
  • 4 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs lightly beaten
  • 2 cups fat free milk
  • 2 tbs honey
  • 1 tbs canola oil

Directions

  1. In a large bowl, combine the flour, baking powder, cinnamon and salt. Combine the eggs, milk, honey and oil; stir into dry ingredients just until moistened. Add apple.

  2. Pour batter by 1/3 cupfuls onto a hot nonstick skillet coated with nonstick cooking spray. Turn when bubbles form on top; cook until second side is golden brown.

  3. Serving Size: 2 pancakes equals 246 calories, 5 g fat (1 g saturated fat), 73 mg cholesterol, 416 mg sodium, 43 g carbohydrate, 5 g fiber, 11 g protein. Diabetic Exchanges: 2 starch, 1 lean meat, 1/2 fruit.
