Oatmeal Pancakes

  • 4 pastured eggs
  • 1 cup probiotic cottage cheese
  • 2 cups gluten-free oatmeal, soaked overnight in water
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg


  1. In a blender or a food processor, blend together all ingredients until smooth.

  2. Use butter or coconut oil to grease a skillet and set on medium heat

  3. Add pancake batter to skillet and cook until sides are lightly browned.

  4. Add butter and maple syrup and enjoy!
