Grilled Pastured Chicken

Note: the marinate for this chicken can be used as a dressing for salads

Cook time: 60 minutes
Serves 5 people

Ingredients

  • 1 whole pastured chicken
  • Marinate:
  • 2 Tablespoons Crushed garlic
  • 1 teaspoon salt
  • 1/2 cup red wine vinegar
  • 1/4 cup cold water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 2 teaspoons sugar
  • 1 teaspoon paprika
  • 1/4 cup olive oil. can add more olive oil if too vinegary

Directions

  1. Cut-up the chicken and salt it. Put chicken in a bowl and pour 1/2 cup of marinate or more if desired.

  2. Allowed to marinate at least for 4 hours or overnight.

  3. Preheat your grill and cook.
