GRAIN-FREE Orange & Carrots Cake

- 2 1/4 cups Otto’s Naturals Cassava Flour
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- 1 cup sugar
- 1 cup avocado oil or other neutral oil
- 4 eggs
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 cup orange juice (approx. 2 oranges for fresh)
- 2 cups grated carrot (approx. 2 large carrots)
- Icing:
- 1 cup powdered sugar
- 1 Tablespoon water
Directions
- Preheat the oven to 365°F. Grease and flour a Bundt pan and set aside.
- Mix together the wet ingredients, including the sugar, oil, eggs, carrots and the juice of the oranges.
- Sift in the flour, baking powder, cinnamon, nutmeg and ginger and mix until fully combined.
- Pour the batter into the prepared Bundt pan and bake for 30-40 minutes or until a cake tester comes out clean with a few moist crumbs.
- As the cake cools, make the icing by mixing together the powdered sugar and water until smooth. Pour the icing over the cooled cake and allow it to drip down the sides. (Optional: sprinkle orange zest on the top of the cake to garnish.)
- Slice and enjoy!
